Combat honors test your skill in battle. Isshin requires you to perform 50 critical hits using the Isshin timing, which is a perfect guard followed by an immediate counterattack. Practice this on standard enemies in the castle courtyard before attempting it on bosses.
Soul Master requires absorbing 10,000 total souls throughout your playthrough. This will come naturally if you fight most enemies and absorb souls from fountains. Weapon Master requires fully upgrading any weapon to level 3, costing 90 Red Souls.
No Item Run is one of the harder combat honors, requiring you to defeat any boss without using healing items. The easiest boss to do this on is Osric, since his attacks are slow and predictable. Combo Master requires achieving a 50-hit soul combo, which is done by rapidly absorbing souls from a group of defeated enemies without breaking the chain.

Fluorite Collector requires finding all 20 Fluorite stones hidden throughout the game. These are small glowing objects in fixed locations, often in corners or behind destructible objects.
